Tasting Note: Elegant, exotic Rioja, the nose a spicebox of black pepper, cloves and cumin, with savoury notes of cocoa and tobacco and a mouthful of juicy dark cherries.
Food Matching: It is the perfect wine to slow braised lamb shanks, Spanish style stew with beans, chorizo and morcilla and hard sheeps’ cheeses such as Manchego.
Vineyard: Edicion Limitada is 100% Tempranillo from Ramon Bilbao’s highest altitude vineyards in Rioja Alta, situated at over 700 metres above sea level. The vines are typically over 40 years old and only the best grape clusters are selected for this wine.
Vinification: This wine comes from a strict selection of 998 barrels. On the selection table in the winery the best clusters are chosen & fermented in wooden vats at controlled temperatures. The wine is then aged in new French & American oak casks for 14 months followed by a further 10 months in cellar before release.
